Originally from Oklahoma, “Big” Ray Cotton moved to the area in 1997. He got his start in barbecue in the backyard with his family and friends and developed the flavors he’s known for. Big Ray’s Bar-B-Que opened its doors in 2011 and has become a local favorite since then. With family recipes like cornbread salad and peach cobbler, it’s no wonder residents and visitors keep coming back for more than just the smoked meat. The peach cobbler is a yummy combination of his wife, Camilla’s filling and his mom’s crust recipe. And we loved every bit of it!
Ray’s best seller is beef brisket with ribs coming in next, but what does he wish more people would try? The smoked all-beef bologna. And we have to say, after taking Ray’s advice, the salty flavor pairs deliciously with both the original and spicy barbecue sauces. (Insider tip: get one of each and mix them together!) We also had some turkey and sausage, but wished we had more room in our bellies to try all the sides. And did we mention the daily lunch specials? For less than $10, you can get a sandwich, side and drink. On Fridays and Saturdays, they have fried catfish on the menu and we’re definitely coming back for that!
Since retiring last year, Ray doesn’t spend as much time at the restaurant as he used to. He still enjoys coming in and seeing his regular customers, especially the senior community, who he says helped keep them going through the pandemic. We’re so thankful to have his authentically Allen barbecue right in our backyard.
